- Strawberry shortcakes
Who doesn’t love cake? It’s a delicious recipe you must try.
Ingredients: Strawberries, orange zest, orange juice, light bright sugar, vanilla yogurt, all-purpose flour, whole-wheat flour, baking powder, baking soda, salt, unsalted butter, large egg, coarse sugar
Instructions:
- Place a rack in centre of oven and preheat to 425ºF. Line a baking sheet with parchment. In a medium bowl, toss strawberries, orange zest and juice and 1 tsp. brown sugar. In a small bowl, mix 1 cup yogurt with 1 Tbsp. brown sugar. Cover and refrigerate.
- In a food processor, pulse the flours, remaining 2 Tbsp. brown sugar, baking powder, baking soda and salt. Add butter and pulse until mixture resembles sand. Add remaining 1/2 cup yogurt and pulse just until dough forms. Transfer dough to a lightly floured surface and form into a flat disk about 6 inches by 1/2 inch. Using a floured 2-inch round biscuit cutter, cut out 4 rounds; press scraps together and form 4 more. Arrange rounds about 1 1/2 inches apart on prepared baking sheet. Brush tops with egg; sprinkle with coarse sugar, if desired.
- Bake until golden brown on top, about 15 minutes. Let biscuits cool on a wire rack for 5 minutes. Halve biscuits horizontally; top with reserved sweetened yogurt, strawberry mixture and biscuit tops. Serve immediately.
- Strawberry Balsamic Frozen Yogurt
This is a healthy way of eating ice cream. Just perfect for those girls night stays.
Ingredients: Strawberries, whole-milk vanilla yogurt, honey, cherry balsamic or regular balsamic vinegar, black pepper, salt
Instructions:
- In a food processor, pulse strawberries until almost smooth. Transfer to a large bowl and whisk in remaining ingredients until well combined.
- Freeze in an ice cream maker according to instructions and transfer to a container with a lid. Freeze until firm, about 4 hours. Let soften for about 15 to 20 minutes at room temperature before scooping.
3. Strawberries with lime and long pepper syrup
This recipe is for the ones who prefer a spicy taste. Strawberries are so awesome that you can make them sweet-n- spicy.
Ingredients: 2 lime, 100g golden caster sugar, 5 medium-sized ‘long’ peppercorn, one crushed and rest left whole (or use 2 tsp crushed black peppercorns), 450g ripe strawberry, hulled and halved, or quartered if large vanilla or coconut ice cream, to serve
Instructions:
Using a vegetable peeler, pare the zest from 1 lime in long strips. Shave away any white pith from the back of the zest (this can make it bitter), then put the zest in a medium pan. Squeeze both of the limes and add the juice to the pan with 3 tbsp water, the sugar and the crushed and whole peppercorns. Heat gently until the sugar dissolves, boil, then take off the heat.
Spread out the strawberries in a serving dish, then pour over the hot syrup and allow to cool. As this happens, the syrup will become rosy pink. Serve at room temperature with scoops of ice cream.
4. Dark Chocolate-Covered Strawberries
It’s a delicious sin one must try.
Ingredients: Dark chocolate, roasted pistachios, large strawberries
Instructions:
Fill the bottom of the double-boiler or saucepan with an inch or two of water and bring the water to a simmer over medium-high heat. Transfer all the chocolate into the top of the double-boiler or the heatproof bowl and set this over the simmering water. Let the chocolate melt, stirring occasionally, until no more lumps remain. Remove the bowl with the chocolate from heat.
Line a baking sheet with parchment
Grasp the strawberry by the top leaves and dip it into the chocolate. Turn or swirl the strawberry as needed to completely coat it in chocolate. Lift the strawberry out and shake gently to remove excess chocolate.
Let the strawberries sit until the chocolate coating is set and dry to the touch. You can put the baking sheet in the fridge to speed this along.
5. Strawberry- yogurt smoothie
In a hurry for college or work? Try this time saving smoothie which is also healthy and delicious.
Ingredients: 1 quart (4 cups) ripe strawberries, 1 cup plain yogurt, 1/2 cup fresh orange juice, 1 tablespoon sugar, 4 thin orange slices (optional)
Instructions:
Hull all but 4 of the strawberries. Add the hulled strawberries to a food processor or blender. Add the yogurt, orange juice, and sugar. Process on the highest speed until a well-blended puree forms in about 15 seconds, stop to scrape down the sides of the container once or twice. Taste the mixture and sweeten with more sugar, if you wish.
Pour into tall glasses. Slit the 4 whole strawberries and the orange slices halfway through to the centres. Attach 1 strawberry and 1 orange slice, if using, to the rim of each glass before serving.
